About this Coffee

Sip on the lushness of Valle de Pavon. Blueberry profiles meet the caramel-like sweetness of Malt. On the nose, you’ll experience sweet and delicate perfumes of Jasmine. If you tend to add sugar, the natural sweetness in this coffee will make you think twice.

We’re excited to offer Valle de Pavon. This coffee features the chiroso variety, which has been introduced and growing in popularity in the Antioquia department of Colombia. The variety has been proven to have a successful yield and high cup score. While genetic information on chiroso is still limited, it has been a common thought that it is highly related to Ethiopian Heirloom despite looking like Caturra, which historically has been heavily cultivated in this region.

The distribution of the Chiroso variety throughout Northern Colombia has been in response to new challenges that producers have endured in the following years. Between the pandemic, climate change, and the global coffee price crisis, coffee quality and sustainable practices at farmlevel are becoming increasingly important. This coffee is the first year’s harvest of this variety that we have featured. The profile is incredibly sweet, with a floral touch.
