About this Coffee
Coffee is selectively handpicked by smallholders and delivered to the local washing station. At intake the cherries are carefully inspected and only the ripe red cherry are processed. The cherries are pulped on the station’s disc pulper and fermented. Following fermentation, parchment is washed in clean water and laid on raised beds to dry. Parchment is raked frequently to ensure even drying. It takes approximately 7 to 10 days for parchment to dry. Once dry, parchment is bagged and stored safely in a secure warehouse at the washing station for about 1 month before being transported to the dry mill and onto exportation.
