About this Coffee

A complex coffee from Panama that showcases layer after layer of bright tropical fruit.

Carlos Cabrera harvests all of his coffee by hand, diligently ensuring only the perfectly ripe cherries make it into his basket. Which is quite a task given Carlos runs his farm of 3,000 coffee trees with only the help of his sister, though his community does lend help during the harvest season.

Carlos strongly believes in the practice of sustainable farming, which led him into the relationship he has with the people at Creativa Coffee District. Creativa is a project our sourcing partner, Equation, has in Panama that focuses on supporting the local farmers such as Carlos Cabrera, processing their coffee at the highest level, and preserving water by using as little as possible to process the coffee.

This coffee is processed in Creativa’s method called Dynamic Cherry. In this process, the harvested cherries are placed in fermentation tanks, void of new oxygen, for 92 hours. Then this coffee is taken out of the tank, dried on patios for 25 days, with the final product exuding a dynamic, tropical flavor profile.
