Mexico High Grown Organic Chiapas The Mexican Chiapas is the cornerstone of FIRSTLIGHT. Mexico is rapidly becoming one of the world’s biggest producers of organic coffee and the quality of the crops is surprising everyone. Chiapas region shares the same mountain range that borders Guatemala’s best growing region, so the terroir is near perfect for coffee. Shade grown Catimor hybrids flourish between 200 and 1200 metres and after harvest the fully washed beans are sun dried.

Ethiopia Yirgacheffe Konga Washed G2 This Yirgacheffe coffee is from the largest coffee growing region in Ethiopia, the very birthplace of coffee. Known as a heirloom coffee it’s pedigree is a wide mix of a native Typica and older strains that have a greater range of flavours. Ethiopia has over a million coffee farms with the average size of farms in this region a mere 1.25 acres where coffee is grown in thick forests . Yirgacheffe coffee is grown at an altitude between 1950 and 2300 metres making it a sweeter bean. Once washed and dried on African beds the intense fruit forward flavours shine through with a clean finish.

This delicately flavoured, medium bodied Central American newcomer is the perfect match for its ancient African landrace partner. The result is a fresh fruit-based coffee, laced with notes of couverture chocolate, vanilla, golden currants and a smooth bright body.
