About this Coffee
Eye of the Tiger is our seasonally evolving espresso blend. We work with in-season coffees to develop a blend that shows off the flavors of the component coffees in unique ways.
Our latest addition features a honey-processed coffee from Honduras and washed coffees from Colombia and Nicaragua.
Presenting the latest edition of our seasonally evolving espresso blend, Eye of the Tiger. This iteration is built around a coffee produced by members of Asociación Coordinadora de Mujeres Campesinas de La Paz (COMUCAP). COMUCAP is a women’s cooperative located in southwestern Honduras, in the Marcala growing region. Thanks to the success of the association, many of the members have been able to purchase their own land where they cultivate additional coffee and other crops. This sweet honey processed lot acts as the foundation of the espresso and contributes flavors of dried fruit.
We then added a coffee produced by the Guerra family on Finca Las Mercedes, a farm situated in the mountainous terrain and temperate climate of southwest Antoquia, Colombia. As devoted stewards of the coffee that they produce and the environment, the Guerra family have dedicated 234 of the farm’s 384 hectares as a nature reserve. This rich and structured coffee contributes body and flavors of dark chocolate to the espresso.
We finished the blend with a coffee produced by members of the SOPPEXCCA cooperative, located in the jungles of Jinotega, Nicaragua. This lot, called Las Hermanas, was produced by the women members of the group. With only 87 members initially, the sisterhood of Las Hermanas has grown over the years, and currently consists of over 240 women growers. This coffee’s sweet, but delicate flavors help to bring all of the blend’s components into balance.
WHY WE LOVE THIS COFFEE
This version’s component coffees culminate in an espresso that can be enjoyed on its own as well as in milk-based drinks. We will roast this version of Eye of the Tiger only as long as the blend components last.
While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
