Dark Matter Coffee’s 16th Anniversary Blend!
This year’s anniversary blend is a send-up to those that helped make us. We’ve been working with the Pacas and Bressani families for years, and we owe a lot of our success to their hard work producing the beautiful coffees we get to share with you all. Naturally, for the 16th anniversary, we wanted to pair together some of our favorite coffees from both of these producers to create a celebratory blend.
For this blend, we are showcasing the same cultivar, Sarchimor, grown by each of the Pacas and Bressani Families. From the Pacas Family, we have chosen to use a natural processed Sarchimor from El Rosario. This coffee is an example of the phenomenal processing at the Tuxpal mill in El Salvador, with loads of acidity and berry notes in the cup.
We blended this with a honey-processed Sarchimor from the Bressani Family at Finca San Jeronimo Miramar. The mill team has been working on improving the cup quality of this coffee, and we’re loving the results. The skin of the coffee cherry is removed, leaving all the jammy, sweet mucilage on the bean to ferment, creating a full-bodied, sweet cup. Together these coffees are a perfect pairing of both the relationships we have and the coffee profiles of these two beans!
We housed the whole thing in a bag from Jason Brammer, whose art and murals are forever woven into the fabric of our cafes.
