About this Coffee
Processed at Koke Shalaye, ‘Supernatural’ is a new processing method where they maximise the benefits of aerobic fermentation creating unique and unusual flavours. The Jarc Heirloom cherries are grown up to 2200masl across Yirgacheffe, using fertile soil with plentiful and consistent rains. Once picked, the cherries are spread in a thick layer on racks in a semi-permeable box, restricting access to sunlight, airflow and oxygen which extends the overall drying time; thus increasing the natural fermentation of the latent sugars. Temperature, brix and moisture readings are recorded periodically and small adjustments to airflow and ambient temperature are made accordingly to achieve even drying. This process creates unbelievable flavours with huge amounts of sweetness and we were blown away when we first cupped this incredible coffee.
