About this Coffee
El Salvadoran Honey Pacamaras have been a favorite variety of our three founders since their early coffee careers, so we have made it an annual tradition to have at least one on our menu since 2017. The Finca El Cipres comes to us from a group of smallholding producers located in the Chalatenango region of northern El Salvador. Chalatenango is located in the hard-to-access volcanic mountain ranges of Alotepec-Metapán, and its unique combination of nutrient-rich volcanic soil, tropical climates, and proximity to the Tamulasco and Cholco rivers creates an incredible atmosphere for coffee growth.
Pacamaras are a hybrid variety primarily grown in El Salvador. A cross between Pacas and Maragogype, this variety of coffee was developed to capture the best of both, resulting in a creamy, complex, and elegant coffee. The Finca El Cipres is a stunning representation of why we fell in love with Pacamaras. Sweetness of fig jam and ripe apricot, with the bold acidity found in a buttery chardonnay, we recommend this coffee for anyone familiar with brighter coffees that is looking for something more adventurous.
