About this Coffee
San Sebastián is an isolated small town located in Lempira, Honduras known its steep mountains and high altitudes. This town has some of the highest altitude coffees growing in all of Honduras, with mountains reaching between 1,700 – 2,000 MASL. Due to the geographic isolation of this coffee and lack of modern infrastructure in the area, farmers in this area have no option but to process their coffee cherries using traditional methods and transport it to export via horseback.
Our farming team at Finca Terrerito first came across this incredible group of high-altitude farmers in late 2020 right after two hurricanes (Iota and Eta) had just ripped through the country of Honduras and caused detrimental damage to local infrastructure. The Finca T team was in the area providing donations and lending out equipment to help repair damages from the storms and flooding. During this trip, the Finca T team were introduced to the group of 8 farmers that make up our San Sebastian roast and given coffee samples to try. After tasting the coffee and loving it, our farm director, Marcial, returned to the area to visit the San Sebastian coffee farms firsthand and verify their sustainable practices before officially making them a part of our Alma-doption direct trade program.
Roast Story:
When this delicious coffee landed at our roastery in Holly Springs, we instantly knew it was something special from the small and dense appearance of the beans. Having a few light roast offerings in our lineup already, we went back and forth on how to best preserve the natural terroir of this delicate and complex coffee. We landed on a light roast profile—not because it was the best fit when looking at our entire lineup—but because it was the best way to bring out the tea like complexity that is truly unique to this coffee.
