About this Coffee
Coffee is a crop, so by nature, it will be inherently different in its flavor every single harvest. This could not be more true when it comes to our honey and natural processes.
Each year, our specialty processes change and we adapt to find a new roast profile that will suit that particular coffee harvest the best way possible. Although we typically lean closer to a light roast with natural and honey processes, we decided to put a spin on our honey process and developed an absolutely delicious medium-dark roast. Get ready to push boundaries with this coffee, a new take on our beloved Honey Process with a deeper and longer roast time that develops a beautiful caramel sugar sweetness.
Origin Story:
Finca La Unica was the second coffee farm added to the Alma Family Farms lineup and is where the beans of our Honey Process roast are grown and harvested each year. Leticia, one of the co-owners of Alma and a 5th generation coffee farmer, is the owner of Finca La Unica, and she is very proud of its high altitude, beauty, and sustainable coffee growing practices that respect and preserve Finca La Unica’s natural surroundings. When Leticia first took over La Unica, most of the land had been used for cattle grazing; However, with the help of the amazing farm team, Finca La Unica has blossomed to include perfectly aligned rows of coffee trees, strategically placed shade trees, and wild fruit and fauna to be found throughout. It is truly a picture perfect coffee farm!
Leticia wanted to take advantage of Finca La Unica’s high altitude and decided to do something that had never been done by the Finca T team before: experiment with Honey and Natural Processing. So, we began consulting with agronomists and the Honduran Coffee Institute (IHCAFE) until we finally began tasting processing results we were proud of.
Today, our honey and natural processing story has made leaps and bounds from its genesis. With new processing facilities and dry milling equipment to ensure consistent quality, we have perfected our practices. Taste the improvement each and every coffee harvest!
