Tolima stands as Colombia’s third-largest coffee-producing region, owing to its elevated altitudes and favorable climate. Flowing through this area, the Magdalena River basin bestows essential water and nutrients to the soil.

William Buitrago tends to his 5-hectare La Esperanza farm, cultivating coffee and nurturing bees for honey. These bees play a pivotal role in the coffee harvest, pollinating trees during their flowering phase.

Following the careful handpicking of coffee cherries, a process unfolds. The cherries are pulped to eliminate outer fruit layers, then washed. Subsequently, the beans undergo a two-day mixed fermentation prior to being sun-dried on patios fitted with retractable roofs.

A lively acidity reminiscent of peckham pear is uncovered, complemented by floral undertones reminiscent of nectarines. The silky mouthfeel mirrors that of white tea, culminating in a finish graced by lingering undertones of sweet rose apple.
