Catur Coffee is a collection thoughtfully curated by Mikael Jasin, the Indonesian Barista Champion, in close collaboration with prominent Indonesian farmers and renowned global farms.
They employ innovative techniques, including unique inoculants and processing methods, to create distinct coffee flavors.
In this particular showcase from their Senja series, they use anaerobic fermentation and a method where the coffee cherries are dried after peeling the skin (anaerobic washed). The resulting flavor profile is a harmonious blend of complexity, fruity sweetness, and a round body.
The intricate process involves hand-selecting ripe cherries, avoiding water submersion, applying an inoculant directly to the cherries, fermenting them in tanks or polybags, and measuring acidity to reach a reading of 3.8. Afterward, the cherries are de-pulped, left to rest for 12 hours, de-mucilaged, and dried on beds until reaching the desired moisture content level of 10-12%. The final sorting is done under ideal conditions approved by the SCA.
The coffee from this process reveals delicate notes of white florals like jasmine and orange blossom, a vibrant acidity reminiscent of muscat grapes, a lingering mellow white peach flavor, and a peony tea-like finish.
