Situated on the fertile slopes of Turrialba Volcano, Aquiares stands as one of Costa Rica’s largest and most historic coffee farms. Here, at elevations exceeding 1,200 meters, the farm has discovered the ideal environment for cultivating the ‘Centroamericano’ variety, a hybrid of Rume Sudan and Sarchimor meticulously developed by Central American coffee research institutes. This variety, cherished for its exquisite cup quality and robust resistance to disease, has consistently proven its worth on the farm.

Aquiares meticulously selects ripe cherries through labor-intensive, manual harvesting by a specialized team of skilled workers. These individuals, compensated generously for their expertise, meticulously pluck only the ripest cherries after multiple visits to each tree during the harvest season. The farm’s commitment to quality is evident in the hands of these dedicated pickers, recognized as the farm’s most valuable asset.

The harvested cherries swiftly make their way to Aquiares’ wet mill, where a range of processing methods, including fully washed, honey processed, and naturals, are employed. For this particular lot, the farm opted for the natural method due to the Centroamericano variety’s compatibility with this process. After careful density sorting, where all floaters are removed, the cherries undergo pre-drying on ceramic floors within the farm’s solar dryer patios for 2-3 days. Subsequently, they are transferred to raised beds within a covered greenhouse, where a slow drying process unfolds over approximately 10 days. To finalize the drying process, the beans are mechanically dried in a Guardiola for one day, ensuring optimal quality and flavor.

Anticipate notes of pomegranate flower complemented by an acidity reminiscent of black grapes. The coffee’s texture evolves from silky to creamy, culminating in a sweet aftertaste reminiscent of panela.
