Catur represents a selection of coffees curated by Indonesian Barista Champion, Mikael Jasin. Through his influential initiative, he collaborates closely with leading Indonesian farmers, endeavoring to elevate the standards of the national coffee industry and unlock the latent potential of locally grown coffee for the global market.
Through their innovative use of unique inoculants and processing techniques, Catur Coffee has meticulously crafted coffee with unique taste categories.
Our debut release features Kamala Merbabu, a gem hailing from Central Java, Indonesia. Kamala involves anaerobic processing, where oxygen-absent tanks ferment ripe coffee cherries to create intricate flavors resembling fruits, as well as fermented notes reminiscent of wine, liquor, and even cocoa.
The process involves hand-selecting ripe cherries and applying an inoculant via spraying directly onto the coffee cherries evenly and sufficiently. These treated cherries are then placed in tanks or plastic for fermentation, with monitoring until it reaches a pH level of 3.8 before drying until the water content reaches 30%. After drying, cherries are restacked and dried further until the moisture level reaches 10-12%, followed by a month-long resting period in a controlled environment.
This cup unfurls with distinct notes of kurma dates, a luscious plum-like juiciness, and a lingering essence of brown sugar sweetness.
